No Bake Mango Passionfruit Cheesecake

This tropical dessert combines a soft sponge cake base with layers of velvety mango and passionfruit filling. Best of all, there's no need to turn on the oven! Ingredients:
Passionfruit Simple Syrup
50g Granulated sugar
100g Water
No Bake Cheesecake Base
2 sheets Sponge Sheets
Passionfruit Cheesecake Filling
300g Cream cheese, soft at room temperature
75g Powdered sugar
200g Heavy cream
125g Water
200g Fond Royal Neutral Mousse Mix
Mango Cheesecake Filling
300g Cream cheese, softened at room temperature
75g Powdered sugar
200g Heavy cream
125g Water
200g Fond Royal Neutral Mousse Mix
Passionfruit Mirror Glaze
100g Mirror Freeze Glaze
Special Equipment:
8" Metal cake ring at least 2" high
Acetate cake band roll, 4" high
8" Cake board
Pastry brush or squirt bottle for flavored simple syrup
Saucepan or microwavable cup for boiling simple syrup
Instructions:
Passionfruit Simple Syrup
1.) Put sugar and water in a saucepan and bring to a boil until all sugar has been dissolved. If you prefer, you can bring the sugar and water to a boil in the microwave instead.
2.) Add the Passionfruit Flavor Paste and mix until well combined. Allow simple syrup to cool before using it on cakes.
No Bake Cheesecake Base
1.) Wrap the inner circle of an 8" cake ring with acetate cake band roll and place 1 Sponge Sheet cake layer (sugary side down) for the base of the cheesecake on top of an 8" cake board.
2.) Brush the cake generously with Passionfruit Simple Syrup, then set aside while you make the no-bake Passionfruit Cheesecake Filling.
Passionfruit Cheesecake Filling
1.) In a stand mixer fitted with a whip attachment, whip cream cheese and powdered sugar together until fluffy. Gradually drizzle in the heavy cream while mixer is whipping on low speed. Scrape the sides of the bowl until fully incorporated.
2.) Once all cream cheese has been added, change whipping speed to high and whip until completely incorporated and fluffy.
3.) In a separate bowl, mix water and Passionfruit Flavor Paste together with a whisk. Add Fond Royal Mousse Mix and continue whisking. Whisk in about ⅓ of the cream cheese mixture. Then add this mixture to the rest of the cream cheese mixture and whip together until fully incorporated.
4.) Spread the passionfruit cheesecake filling on top of the sponge sheet cake layer inside of the prepared cake ring.
5.) Add another sponge sheet cake layer and brush with the Passionfruit Simple Syrup. Set the cake in the freezer, while you prepare the Mango Cheesecake Filling.
Mango Cheesecake Filling
1.) In a stand mixer fitted with a whip attachment, whip cream cheese and powdered sugar together until fluffy. Gradually drizzle in the heavy cream while mixer is running on low speed.
2.) Scrape the sides of the bowl until fully incorporated. Once all of the cream has been added, change the whipping speed to high, and whip until completely incorporated and fluffy.
3.) Mix water and Mango Flavor Paste together with a whisk. Add Fond Royal Mousse Mix and whisk together. Whisk in about ⅓ of the cream cheese mixture. Then, add this mixture to the rest of the cream cheese mixture and whip together until fully incorporated.
4.) Spread the Mango Cheesecake Filling on top of the simple syrup soaked sponge sheet cake layer inside the prepared cake ring. Set cake in freezer for at least 1 hour to allow cheesecake fillings to set.
Passionfruit Mirror Glaze
1.) Remove the cake from the freezer. In a small bowl, mix Passionfruit Flavor Paste with Mirror Freeze Glaze until fully combined.
2.) Spread the flavored mirror glaze evenly on top of the Mango Cheesecake Filling layer using a small offset spatula.
3.) Remove acetate cake band collar. Decorate to your desire with fresh sliced mango, whole small berries, or other fresh fruits.
