Brown Butter Pumpkin Spice Doughnuts

These Brown Butter Pumpkin Spice Doughnuts covered in cinnamon sugar are the best way to celebrate pumpkin spice season! Pumpkin purée, nutty brown butter and Pumpkin Spice Baking Flavor bring out the comforting flavors of fall and just the right amount of warm spice.

Yield: 17 Doughnuts, 3.25" in diameter x 1.25" high

Ingredients:

Pumpkin Spice Doughnuts

10 oz (280g)                  All purpose flour

0.32 oz (9g)                   Baking powder

0.24 oz (6.7g)                Salt

15 oz (425g)                  Canned pumpkin purée

10.6 oz (301g)               Granulated sugar

5 oz (142g)                    Unsalted melted brown butter *See recipe notes              

 0.35 oz (10g)                Pumpkin Spice Baking Flavor

0.18 oz (7.5g)                Vanilla Moroni Flavor Paste

3                                    Whole eggs

 

Brown Butter Sugar Topping

5.3 oz (150g)                 Granulated sugar

0.16 oz (4.4g)                Ground cinnamon

2 oz (57g)                      Unsalted melted brown butter

   

Instructions:

Pumpkin Spice Doughnuts 

1.) Preheat oven to 350°F.

2.) Whisk flour, baking powder, and salt together in a bowl and set aside.

3.) In a mixing bowl with a paddle attachment, beat pumpkin purée, sugar, brown butter, Pumpkin Spice Baking FlavorVanilla Moroni Flavor Paste and eggs together until smooth.

4.) Add the flour mixture to the pumpkin mixture and beat until combined.

5.) Place batter in a piping bag without a tip and cut the end to create a half inch slit.

6.) Pipe batter into a doughnut mold, and smooth out the batter with wet fingers.

7.) Bake doughnuts in a preheated oven at 350°F for about 15 minutes until a toothpick comes out clean when inserted into the center. Set doughnuts on a cooling rack to cool.

8.) Once cool, remove doughnuts from the mold and set aside.

Brown Butter Sugar Topping 

1.) In a small bowl, mix together the ground cinnamon and granulated sugar until fully combined.

2.) Brush the cooled doughnuts on all sides with the melted brown butter and dip into the cinnamon sugar mixture to coat.

3.) Serve doughnuts warm or at room temperature and enjoy!

*To create the melted brown butter, place unsalted butter in a pan and cook over medium heat until the milk solids have browned and the butter smells fragrant and nutty.
