Blackberry White Chocolate Ganache Tarts
Indulgence meets elegance in every bite of these Blackberry White Chocolate Ganache Tarts! Irresistibly smooth white chocolate ganache is naturally colored and flavored with blackberry purée and blackberry flavor paste, perfectly balanced by the buttery crunch of golden ready-to-fill Sweet Tart Shells.

Yield: (3) 7" Tarts
Ingredients:
150g Blackberry Purée
114g Heavy whipping cream
340g Belgian 29% White Chocolate
2g Fine sea salt
Instructions:
1.) Place blackberry purée, heavy whipping cream and salt in a saucepan and bring to a boil. Remove from heat immediately.
2.) Place white chocolate in a bowl. Pour hot blackberry purée and heavy whipping cream mixture over white chocolate. Allow it to sit for a minute.
3.) Whisk together until all white chocolate has melted. Add Blackberry Flavor Paste and whisk again until fully combined.
4.) Pour the blackberry white chocolate ganache through a sieve to ensure that the ganache has a silky, smooth consistency.
5.) Allow to cool for about 30 minutes before pouring your blackberry ganache into tart shells. If desired, garnish with fresh berries.

Recipe Notes:
Storage Instructions: You can make the ganache ahead of time and store it in the refrigerator for about a month, or freeze for up to 6 months. When ready to use, reheat the ganache in a bowl over a hot water bath until you reach your desired consistency. Alternatively, microwave on medium-low heat until melted to desired consistency.
Other Uses for Blackberry White Chocolate Ganache: Use as a filling for cakes and truffle shells, or as a frosting for cakes and cupcakes.
