Elfroy Cold Process Pastry Cream
A tremendous time saver! PatisFrance Cold Process Pastry Cream may be enriched by substituting half of the water with whole milk. The flavor of Elfroy may be enhanced with the addition of colorants or Dreidoppel flavoring compounds. Use for fillings for cakes, pies, tarts, cream puffs, eclairs and more.
Pack Size: 11 lbs
380 to 400g (12.5-13.5 oz) Elfroy / 1 liter(33.5 oz) of cold water. Pour water in a mixing bowl. Add ELFROY. Mix one minute at low speed, the 3 minutes at maximum speed. Let stand 10 minutes minimum.
