All-purpose glaze from PatisFrance that will provide your pastries with a shiny gloss. It is long lasting and will not break down easily from acidic fruits. It has a wonderful apricot flavor and will not burn if left on the stove. Great for fruit tarts, Danishes, etc. To use: add 10-30% water to the glaze. Bring to a boil.
