Recipe:

Ingredients:

  • 35g Trilonga 35
  • 220g Sugar
  • 45g Dextrose
  • 15g Glucose Powder
  • 1000g Plain Almond/Soy/Coconut/Cashew Milk/or water (for sorbet)
  • Dreidoppel Ice Cream Flavor or Flavor Paste (for amount required see dosage on product packaging)
  • 5g Crema Volumina (DRE 52418 4)

Instructions:

Cold Process:

  • Whisk dry ingredients together.
  • Add milk substitute or water (for sorbet) and blend with a power stick blender.
  • Add Dreidoppel Ice Cream Paste or Flavor Paste and fruit purée (optional). Blend again. If desired, fresh or frozen fruit may also be added in this step.
  • Allow to mature for at least 20 minutes. Add Crema Volumina (DRE 52418 4) before pouring into a batch freezer.

Hot Process:

  • Whisk dry ingredients together.
  • Add the dry mixture, milk and dairy cream to the pasteurizer and heat at approximately 122°F (50°C); pasteurizer will automatically cool down the mixture and hold it at 40 to 41 degrees.
  • Finish the pasteurizing process. Optimal maturation time: at least 6 hours.
  • Add Dreidoppel Ice Cream Paste or Flavor Paste and fruit purée (optional). Blend again. If desired, fresh or frozen fruit may also be added in this step.
  • Add Crema Volumina (DRE 52418 4) before pouring into a batch freezer.
